kale pesto pasta





Roasted kale and garlic is the base to this amazing pesto which can be used on multiple dishes but pairs perfectly with pasta and vegan Italian sausages.






Ingredients:

8 oz pasta

5 cups chopped kale

10 cloves garlic

1 Tbsp olive oil

2 Tbsp nutritional yeast

1/4 cup vegetable broth

1/4 cup walnuts

Juice from 1/2 a lemon

Pinch of chili flakes

1/4 tsp salt

2 vegan sausages

Vegan parmesan


Instructions:

Preheat oven to 375. In a bowl add chopped kale and garlic and toss in olive oil. Add salt and pepper to taste. Add chopped kale and garlic cloves to a sheet pan and bake for 10 mins.


Cook pasta according to instructions then drain.


While pasta cooks, chop vegan sausages into rounds and cook on a on stove on med-high heat about 2 mins per side.


When kale and garlic are done cooking add to food processor or blender with nutritional yeast, vegetable broth, walnuts, chili flakes, lemon juice, and salt. Blend until smooth. Return pasta to pot and toss to coat.


Plate and top with vegan sausages, vegan Parmesan, another squeeze of lemon juice and more red chili flakes if desired.
