italian seitan sausages





These Italian Seitan Sausages are perfect for on the grill, in a bun, added to pasta or topped on pizza!





Ingredients:

1 small yellow onion chopped

3 cloves garlic minced

1/4 cup sun-dried tomatoes in oil chopped

1 cup vital wheat gluten

¼ cup nutritional yeast

1 tsp salt

2 tsp garlic powder

1 tsp paprika

1 tsp coriander

2 tsp crushed red pepper

1 Tbsp Italian seasoning

1/4 cup refried beans

3/4 cup cold vegetable broth

1 tsp maple syrup

1 tsp hot sauce

2 Tbsp olive oil

1 Tbsp soy sauce

1/4 tsp liquid smoke


Instructions: Preheat oven to 325. Heat a small drizzle of olive oil on a pan over med high heat and cook chopped onions and garlic until they are soft and slightly browned about 6 mins.


Mix all the dry ingredients in one large bowl. Toss in the chopped onions and sundried tomatoes into this bowl.


Mix all the wet ingredients in a separate bowl. Add the wet ingredients into the dry bowl and combine with a spoon. It should make a doughy mixture like if you were making bread or pizza dough. Move to a clean flat surface and knead the dough for 5 minutes.


Cut the dough into 6 equal pieces. Then roll the dough into sausage shaped pieces. Try to make them as even as possible.


Cut 6 pieces of aluminum foil about the size of a piece of paper. Fold it in half vertical then place the sausage onto it. Wrap it tightly then twist the ends tightly. They should look like candy wrappers.


Place on a baking sheet with seams side down. Bake for 35 mins. After they bake they are fully cooked so you can eat as is or you can keep in the fridge until you are ready to use. To reheat just cut up and cook on a pan for about 2-3 mins per side or leave as is and grill or fry on a pan for 2-3 mins per side.
